3-ingredient peanut butter cups
Sometimes you just crave something chocolatey, nutty, and sinfully delicious. Many chocolate bars perfectly combine these three aspects. If only that guilty conscience wouldn't knock afterward! But it doesn't have to, because with Xucker instead of sugar, you can make your favorite chocolate treats yourself. This week: Peanut butter cups.
Making peanut butter cups without added sugar
Unsweetened peanut butter or peanut puree can now be found in any well-stocked supermarket, or in your trusted organic market. In addition to the main ingredient, you only need two more: powdered erythritol, the calorie-free alternative to commercial powdered sugar, and chocolate. Here, it's up to you whether you choose milk chocolate or the slightly more bitter dark chocolate variety. Our chocolate drops are particularly easy to melt.
Instructions
- Prepare small muffin or silicone molds for the peanut butter cups.
- Melt the chocolate drops over a double boiler and pour a tablespoon of melted chocolate into each mold.
- Lightly tap the molds on the countertop and place them in the refrigerator for about 10 minutes. Keep the remaining chocolate melted over the double boiler.
- In the meantime, prepare the filling. Simply knead the peanut butter and powdered erythritol into a dough and form it into enough small balls.
- Once the chocolate in the refrigerator has hardened, place a peanut butter ball into each mold. Make sure they don't touch the edge of the mold, otherwise the chocolate won't be able to completely encase them.
- Distribute the remaining chocolate over all the molds and let the peanut butter cups cool and harden completely in the refrigerator (about 30 minutes).
