Baked apple with marzipan
Baked apples are a simple and Christmassy dessert where the filling is key. We fill our baked apple with marzipan, which we make ourselves without sugar, of course. A marzipan mixture can be quickly kneaded from equal parts ground almonds and erythritol powder. Did you know? The typical flavor comes from bitter almonds.
Filled with homemade marzipan with no added sugar
Baked apples with marzipan taste especially good when a subtle hint of vanilla is added to the marzipan mixture. We use Vanillexucker for this.
Instructions
1. For our baked apple with marzipan, we first prepare the sugar-free marzipan. To do this, mix equal parts ground almonds and erythritol powder in a bowl. Add a few drops of bitter almond flavoring, some white almond butter, a small splash of water, and a pinch of salt.
2. The almond butter helps to knead the mixture into a smooth consistency, but is optional. If the mixture is too moist, you can knead in a little more erythritol powder.
3. Then, mix the egg and cream cheese together with Vanillexucker and cinnamon until smooth.
4. Crumble the marzipan and stir into the mixture. Add the slivered almonds.
5. Halve the fresh cranberries and mix them in. Set the filling aside.
6. Preheat the oven to 160°C (fan oven).
7. Wash the four apples and cut off the tops like a lid. Remove the cores generously.
8. Fill the apples and bake for 25-30 minutes, depending on the desired firmness of the apples.
