Blueberry muffins
Blueberry muffins are a real perennial favorite. Blueberry muffins can be found in every coffee shop in the USA and are characterized by their fluffy texture and, of course, the baked-in blueberries. If you omit the berries, this muffin recipe also works wonderfully as a basic recipe that can be spiced up with various toppings.
Baking blueberry muffins with no added sugar
Our blueberry muffins with no added sugar are baked with Xucker Premium (xylitol). Give them a try; you're sure to love them.
Instructions
1. For the blueberry muffins, preheat the oven to 180°C (fan/convection oven) and line a muffin tin with paper baking cups. We actually recommend using the baking cups for this recipe, as the muffins with so many blueberries will otherwise be very difficult to remove from the tin.
2. Beat the butter, Xucker Premium, Vanillexucker, and salt in a bowl for about three minutes.
3. Then add the egg and beat the mixture again.
4. Stir in the natural yogurt.
5. Now combine the flour and baking powder and add to the butter and Xucker mixture. Mix everything quickly.
6. Wash the blueberries thoroughly and dust them with flour to prevent them from sinking into the tins.
7. Bake the muffins for 17 minutes until golden brown, remove from the oven, and let cool.
8. Remove from the tin and enjoy.
