Cantuccini without added sugar
Cantuccini, the delicious Italian almond biscuits, go perfectly with coffee or tea. By using spelt flour and Xucker Premium (xylitol), our recipe for cantuccini without added sugar is healthier than the ready-made pastries from the supermarket. The crispy pastries originally come from the Italian province of Prato near Florence, which is why they were initially called "Biscotti di Prato". Baking cantuccini (almond biscuits) with xylitol
For sugar-free cantuccini, you only need a few ingredients and a bit of time. Vanillexucker provides the special aroma.
Instructions
1. For the cantuccini, put all the ingredients except the almonds in a large bowl and knead vigorously - don't be surprised, the dough is relatively dry and crumbly at first.
2. Knead in the almonds, shape the dough into a ball and chill for 30 minutes.
3. Then cut the dough into six equal pieces and shape each into a roll. Place the rolls next to each other on a baking tray lined with baking paper, leaving some space between them, and pre-bake in a preheated oven at 200 °C (top/bottom heat) for 15 minutes.
4. When the rolls have cooled, cut them diagonally into 1 cm thick slices. Place the individual cantuccini with a cut side down on the baking tray and bake for another 10 minutes until they are golden brown.
