Coconut oatmeal
Coconut oatmeal is a nutritious breakfast to get your day off to a great start. Following our recipe from "The 30 Day Xucker Challenge," on day 29 you'll create a healthy and balanced foundation for your day and stay full for a long time due to the balanced macronutrient distribution.
Sugar-free coconut oatmeal
We sweeten our coconut oatmeal with erythritol, saving calories and unhealthy sugar as a result. Our sweetener of choice is Xucker Light, but Xucker Bronxe or powdered erythritol work just as well.
Instructions
1. To make the oatmeal, first combine the coconut milk and water in a saucepan and bring to a boil over medium heat.
2. Then stir in the oats and simmer over low heat, stirring continuously, until the liquid is completely absorbed. Stir the oatmeal vigorously with a wooden spoon until the gruel forms.
3. Sweeten with Xucker Light and bourbon vanilla and divide between two bowls.
4. Finally, garnish the oatmeal with the fresh berries and coconut flakes. Enjoy!
