This time, our sugary-sweet world tour takes us to France. We're serving Crêpe Suzette with Xucker Bronxe. These are wafer-thin pancakes soaked in orange sauce and then flambéed with orange liqueur. French Crêpe Suzette with erythritol For the orange sauce, we use Xucker Bronxe, a calorie-free raw sugar substitute based on erythritol. This gives the dessert a caramel flavor while remaining low in sugar, despite the fructose from the oranges.

Instructions

  1. For our Crêpe Suzette with Xucker Bronxe, first prepare the batter. Whisk together the flour, egg, milk, and salt until you have a smooth batter. Finally, add the sparkling water until it's no longer too thick. Let the batter rest for a short time.
  2. In the meantime, peel two oranges with a sharp knife, removing all the white pith. Cut out the segments and set them aside. Squeeze the juice from the remaining parts.
  3. Squeeze the third orange.
  4. Now, bake thin crêpes one by one, and stack them.
  5. Melt 1 tablespoon of Xucker Bronxe in the pan and coat the orange segments with it. Transfer to a bowl and set aside.
  6. Next, melt 2 tablespoons of Xucker Bronxe in the pan and dissolve the butter in it, add the orange juice, and optionally add a little Cointreau here.
  7. Halve the lemon. Prick one half with a fork and rub the pan with it. This gives the sauce a slightly bitter note.
  8. Dip each crêpe individually in the sauce and fold them into triangles in the pan (transfer to a plate in between if necessary).
  9. Return all the folded crêpes to the pan. Gently heat a shot glass of Cointreau and pour it into the pan. Ignite it with a long lighter and immediately swirl the pan to allow the flames to get enough air. (Alternatively, the Cointreau can be ignited in a ladle and then poured into the pan while still flaming.)
  10. Arrange on two plates and garnish with the orange segments and some fresh mint.
