Make your own vegan dominoes without added sugar
Our dominoes aren't completely sugar-free either, due to the fructose in the apricot fruit spread. However, if we look at the nutritional information of store-bought dominoes, we see that over half the weight is sugar – isn't that shocking? Our homemade dominoes, with just 2 grams of sugar per 100 grams, are a true blessing.
Instructions
- Cream together the nut-nougat cream with Xucker Premium and Bronxe, then liquefy it slightly with hot water.
- Mix the dry ingredients well in a separate bowl, add them to the nougat-Xucker mixture, and knead into a firm dough. Chill for a good hour.
- Combine all ingredients except the water in a bowl.
- Start kneading the marzipan in the bowl. If it remains crumbly, add a tablespoon of water. Add another if needed.
- Knead the marzipan on a surface dusted with powdered erythritol until it forms a homogeneous mass, then roll it out evenly. Use a baking frame to shape it to 20 × 30 cm, cover, and set aside.
- Preheat the oven to 180°C (350°F) with fan-forced heat.
- Roll out the gingerbread dough directly on a sheet of parchment paper. Make sure it is slightly larger than 20 × 25 cm and as even as possible.
- Use the baking frame to cut the gingerbread dough to the exact size. "Cut out" the gingerbread with the frame and leave it in the frame. Prick it generously with a fork to prevent bubbles and bake for 10-12 minutes.
- Mix the jar of apricot fruit spread with water in a small saucepan. For a particularly smooth layer, you can purée the fruit spread.
- Dissolve a packet of agar-agar in the liquid according to package instructions and bring to a boil. Pour it hot onto the gingerbread base.
- Let it set in the refrigerator for at least an hour.
- Place the marzipan layer on the jelly layer and trim the edges evenly if necessary. Use a ruler to cut 2.5 × 2.5 cm dominoes.
- Melt the chocolate drops over a water bath and use a toothpick to dip the dominoes in the chocolate, leaving the gingerbread "clean" from below.
- Carefully place the dominoes on a wire rack to drip and let the chocolate set.
