Low carb strawberry meringue cake with no added sugar
Andreas from the Xucker team and his daughter Jasmin show you their favorite recipe for a simple and fresh low carb strawberry meringue cake with homemade low carb vanilla pudding.
Instead of a mixture of Xucker Premium and Xucker Light in the chocolate base, you can also use 40 g of Xucker Premium.
Instructions
1. Prepare the low-carb vanilla pudding the day before, or at least in advance.
2. Preheat the oven to 170 °C top and bottom heat.
3. For the base, first separate the eggs and lightly beat the egg whites.
4. Then beat the egg yolks with Xucker until frothy and stir in the milk a little at a time.
5. Now add the dry ingredients: stir in the almond flour, baking powder and hot chocolate until a smooth dough is formed.
6. Then fold in the egg whites and put the dough in a greased and floured dish.
7. Bake the base for 30 to 35 minutes and let it cool completely.
8. In the meantime, wash and cut the strawberries.
9. For the meringue topping, beat the egg whites with salt and Xucker Premium until stiff.
10. When the cake has completely cooled: First spread the vanilla pudding on the cake base, then place the strawberries on top and finally carefully spread the meringue topping over it.
11. Put the cake back in the oven at 200 degrees for 6 to 10 minutes until the meringue is golden brown.
