Did you know that poppy seeds are rich in iron, calcium, potassium, and magnesium? All minerals that are good for our heart, brain, and muscles. A sugar-free poppy seed cake is therefore not only temptingly delicious, but also healthy. Poppy seed cake with sugar-free whole-wheat shortcrust pastry For the poppy seed filling, we use unsweetened almond milk instead of regular milk or another plant-based alternative. Almond milk contains the least sugar of all milk alternatives. For the base and for the crumble, we use a high-fiber shortcrust pastry made from whole-wheat spelt flour, a little butter, and Xucker Premium – our xylitol-based table sweetener. Xylitol has great baking properties and is ideal for sugar-free baked goods. We also use Vanillexucker. Would you like to enrich your cake with a few grams of protein? Then mix some unsweetened protein powder into the poppy seed mixture. Alternatively, you can mix a little low-fat quark into the poppy seed filling. We've kept the sugar-free poppy seed cake recipe as simple as possible and kept the ingredients to a minimum. Do you like things sweet? Then don't be afraid to add a little more Xucker to the crumbles.

Instructions

1. For the sugar-free poppy seed cake, first prepare the shortcrust pastry. Mix all ingredients in a bowl and knead into a dough.
2. Crumble one-third of the shortcrust pastry into a separate bowl and chill the entire dough for half an hour.
3. Preheat the oven to 160°C fan/convection oven and line the springform pan with baking paper.
4. In the meantime, prepare the poppy seed filling: Bring the poppy seeds, almond milk, butter, sugar, and Vanillexucker to a boil in a small saucepan and simmer for 2 minutes.
5. Remove the poppy seed mixture from the heat and let it cool.
6. Now stir the egg whites, the whole egg, the lemon zest, and the lemon juice into the poppy seeds.
7. Optionally, stir a tablespoon of flour or some protein powder into the poppy seed mixture at this point. This will give the cake extra firmness after cooling.
8. Roll out 2/3 of the shortcrust pastry and place it in the springform pan as the base, pulling the dough up slightly at the edges.
9. Pour the poppy seed mixture into the pan and bake the poppy seed cake for 20 minutes.
10. Spread the crumb topping over the cake and bake for another 20 minutes.
11. Remove the cake from the oven and let it cool completely.
