Pumpkin pie oatmeal
Autumn is here, and with it, pumpkins in all shapes and colors are once again finding their way into our kitchens. The weather practically invites us to slow down from everyday life and do something good for ourselves. Imagine cozying up at home on the sofa with a good book and a warm and nutritious bowl of pumpkin pie oatmeal that warms your body from head to toe. Packed with healthy fiber, B vitamins, and beta-carotene, this dish supports your well-being and keeps your blood sugar levels stable thanks to the sweetness of erythritol.
Oatmeal with pumpkin spice
We top the oatmeal with some homemade pumpkin spice granola.
Instructions
1. First, mix all the ingredients for the pumpkin spice seasoning. For the oatmeal, you'll need 1.5 teaspoons. You can store the rest in an airtight screw-top or flip-top jar.
2. For the pumpkin pie oatmeal, combine the oats, water, pumpkin puree, oat milk, pumpkin spice seasoning, Xucker Bronxe, and a pinch of salt in a small saucepan and bring to a boil over medium heat.
3. Then reduce the heat slightly and simmer for another 5-6 minutes. Stir regularly until the desired consistency is reached. Add a little more liquid if needed.
4. Transfer the finished oatmeal to a suitable bowl and garnish as desired. We used half a banana, some brown almond butter, a splash of oat milk, and our pumpkin spice granola.
