Instructions

1. For our red berry compote with vanilla sauce, we'll first make the sauce. Combine all ingredients in a bowl and heat over a water bath to over 70°C until slightly thickened. Stir constantly and scrape the thickened sauce from the sides of the bowl with a spatula. Pour into a bottle and set aside.
2. For the red berry compote, pour the juice into a saucepan and sift the guar gum and agar agar over the liquid, stirring constantly.
3. Stir in the Xucker Light and let the juice stand for a few minutes. This allows the liquid to thicken slightly.
4. Now add the berries and heat gently.
5. Briefly bring the red berry compote to a boil, remove from the heat, and let cool.
6. Divide the red berry compote between two bowls and pour the vanilla sauce over it.
