Making your own sugar-free chocolate marshmallows is surprisingly easy and quick. And that's a good thing! Because those chocolate-covered marshmallows bring back sweet childhood memories for just about everyone. Sadly, the store-bought ones are loaded with sugar and definitely not healthy. We wanted to create a healthier version of these little treats. DIY sugar-free chocolate marshmallows We initially tried the recipe with powdered erythritol to keep the calories super low. But after some more testing, we found that using Xucker Basic or Premium makes them taste just like the classic version, and the marshmallow filling turns out much creamier.

Instructions

1. Whisk the egg whites, Xucker Premium, and salt in a glass or metal bowl.
2. Heat over a hot water bath for about 5 minutes, stirring constantly, to approximately 70 degrees Celsius. At least until the Xucker has dissolved.
3. Remove from the heat and beat the egg whites for 6 minutes until stiff peaks form. Add the baking powder halfway through. Then let cool completely.
4. Fill the meringue mixture into a piping bag and pipe onto the cookies/waffles.
5. Melt the chocolate drops over the water bath and pour over the meringue dots.
6. Now refrigerate the sugar-free marshmallows for about 15 minutes to allow the chocolate to harden.
