Sweet and sour pickled melon peel with Xucker
Do you also love eating watermelon in the summer? Then you know how much watermelon rind is left over, which then simply ends up in the trash. But that doesn't have to be the case, because watermelon rind is edible. Cooked in a brine of vinegar, Xucker, and spices, this kitchen waste becomes a delicious side dish. The sweet and sour pickled watermelon rind then tastes similar to pickled gherkins.
Recipe for sweet and sour pickled watermelon rind with Xucker
For our sweet and sour pickled watermelon rind, we use our new organic xylitol. Because xylitol preserves just as well as sugar. Whether for fruit spreads, chutneys, or preserved vegetables – xylitol always works well. You can let your cravings run wild with the spices. We used a classic pickling spice blend.
Instructions
- For the sweet and sour pickled watermelon rind, first remove the outer, hard green skin of the watermelon with a vegetable peeler.
- Then remove the red flesh (leaving a thin layer attached to the rind) and enjoy it as usual.
- Cut the watermelon rind into bite-sized pieces and place them in a pot.
- Add all the remaining ingredients and bring the mixture to a boil.
- In the meantime, prepare the canning jars and simmer the watermelon rind for about 7 minutes.
- Pour the rind into the jars while still boiling hot and seal tightly.
