Sweet and spicy fig mustard

Instructions
1. Quarter the dried figs, removing any tough tops.
2. Combine the apple juice and figs in a medium saucepan. Bring to a boil briefly and simmer on medium heat for about 12 minutes.
3. Let cool slightly and then gently blend with an immersion blender.
4. Add the Xucker mustard, balsamic vinegar, and a pinch of salt. Mix everything well, then pour into the hot, rinsed jars and seal. Turn the jars upside down and let cool. Store the fig mustard in a cool place.
