Vegan bowl with lime peanut dressing

Instructions
1. Bring the whole-grain rice to a boil with twice the amount of water and a little salt. After about half an hour, when all the water has been absorbed, remove from the heat and let it swell.
2. In the meantime, prepare the dressing. To do this, place the Xucker Light and Xucker Bronxe in a small preserving jar, add the chopped ginger, and pour in a little hot water. Let it cool briefly. Then add the remaining ingredients, close the jar, and shake well.
3. Now grate the carrot, dice the cucumber, and slice the romaine lettuce. Cut the smoked tofu into bite-sized pieces. Peel the avocado and mango and cut into wedges, and tear the cilantro.
4. Now it's time to serve. First, divide the rice between two bowls, garnish with the raw vegetables, add the tofu, and drizzle everything with the dressing. Now serve the vegan bowl with cilantro sesame or peanuts as desired.
